Grossly Under Estimated

When mom said we're doing Whole30 I thought that it was going to be a piece of cake. It was anything but cake, because we're not allowed to eat cake. I grossly under estimated how hard this was going to be. One thing I've had to give up would be sweet things. I will be at school and really start craving something sweet that they offer and have to choose not to have it. The first couple of days were hard, I'm not going to lie. Breakfast was kind of difficult for me because I can't eat eggs plain, but we soon found some great breakfast options.(quiche, coconut flour waffle's) Dinner was my easiest meal. We've had meatloaf, delicious beef, and baked chicken. The hardest thing for me though has been lunch. My first lunch sounded good, but ended up being soggy. We tried multiple versions of that but could not find a solution. I love food that has to be hot so we decided to get a thermos, but found something better. I now take chicken with guacamole everyday with applesauce, pistachios and a banana for snack. I now look forward to lunch. I have started to have more energy than usual and I am sleeping better. Which is great! We all still have a long way to go but I think I'm ready for it now. Let's do this thing! ~ Ella (12 years old)
