Day #16...Hanging in There

This day was full of tending to a very sick child. Poor Gracie is so sick! I woke up to our morning routine and scarfed down a piece of my standby...veggie no crust quiche. Lunch was a desperate struggle to put together a salad. I had lots of veggies, but no cooked protein! Luckily I found some roast beef in the fridge and cut it into chunks and I sauteed it to warm it up. The salad turned out pretty great and it was a nice protein change.
After lunch I knew that I was going to have to just be with Gracie, as she just wanted companionship for comfort, so I grabbed a couple of steaks from my freezer (last year's cow) and threw them in my crock-pot with salt and pepper. Once the meat was cooked I "pulled it" and set it aside for dinner. As dinner approached I roasted diced sweet potato, cauliflower and broccoli in garlic grapeseed oil and threw in my beef. It was very tasty! I made a salad on the side and dinner was done!
Hoping that Gracie's fever breaks and we all steer clear of whatever bug she has. On the bright side today, our cow came! So we will be having delicious hamburgers tomorrow night for dinner! ~Jen
