Day #1...Pretty Uneventful...I'll take it!
Today was THE day! Day #1 of my family's journey to better health. I prepped most of today's food last night. The kids will not be partaking in school lunch this month, so it was fruit salad (fresh pineapple, kiwi & watermelon), hard-boiled egg and nitrate/sugar free deli turkey roll-ups with julienne carrots & cucumbers. I definitely thought about them at mid-day, when I knew they would be tearing into their lunches at school. Would they eat it? Were they starving? Nothing too dramatic to report...when I picked them up from school they all reported that they ate lunch, liked it and were not hungry! (Course, it is day #1...the bar has been set, how will I keep this momentum?!?!)
I spent a lot of time over Christmas break creating menus in hopes that it would help streamline this entire process for me. I don't regret the work I put into the menus, but right off the bat I was "winging it." Not having Diet Coke today was rough for me. I just needed the easiest food options possible. I will revisit the menus once I've detoxed from "the sauce..." For now, I will do what I have to do to remain compliant with my food choices. Here is recap of today's meals: Breakfast was a fajita egg scramble, 1 pepper (sliced thin), 1/2 onion (sliced thin), 1 clove garlic (minced), handful of baby portobello mushrooms (sliced), 1 T EVOO, 3 eggs, 1/4 avocado (sliced).
Lunch: Avocado Chicken Salad with Veggie Side Salad, leftover rotisserie chicken mashed up with (1) avocado and salt & pepper. I put that on a bed of salad greens, cucumber & tomato. I sprinkled a few sliced almonds and some red wine vinegar a top.
Dinner: Leftover Thanksgiving turkey (from the freezer), coconut milk, curry powder, kale & shredded carrot. That's it folks! This meal was so good! The best part wasn't even the taste, but the fact that the kids loved it...and even ate it with a side of green beans!
All in all, I would say Day #1 is a success! I am so glad that I can adapt and am not over thinking the meal options. Anyone who knows me, knows that I LOVE to be in the kitchen. I love food and all aspects of cooking and creating, but today I needed it to be simple...and it was :) ~Jen
