Day #9...We Got This
Today was just another day for the books. An "average" day of housekeeping, kids and of course...cooking! I set off to the grocery store in hopes to find a "compliant" Whole30 stir-fry sauce...Ha! Ha! Ha! I think that I have mentioned this before, but everything has sugar in it! A friend (who also is doing Whole30) tipped me off to coconut aminos (which tastes like a less salty soy sauce). I have never heard of coconut aminos, but that combined with homemade chicken broth, minced garlic, scallions and a little arrowroot (to thicken) made an amazing stir-fry sauce! I am still very much appreciating that I am not starving all day, and I am honestly not craving sugar or "the sauce" (Diet Coke) at all...it is all very weird to me! I really feel like my entire family is starting to "get it." We talk honestly about what we are doing. They know that this is not "Daviesdowhole30365." They know that we will have bread and sugar and beans and grains again, but they are also appreciating the incorporation of so many fruits and vegetables. We talked a little bit about our game plan for day #31 and no one really suggested going on a "bender.." so I am going to chalk that up to a "W" and appreciate their perspective. A quick recap of our meals today (which include some repeats). Breakfast was a "monkey salad" which is a sliced banana with a handful of cashews and a handful of raw coconut. Lunch was a repeat of yesterday (and dinner the day before)...it is so good...I could eat it every day! Carnitas with a salad and manago, avocado, red onion salsa. Dinner was a wonderful stir-fry of eggplant, zucchini, peppers, mushrooms, broccoli, cauliflower and ground pork (with the sauce that I mentioned before). It was yummy (good thing I made enough for an army)!~Jen
