Day #8...Not reinventing the Wheel

Today I did not reinvent the wheel. I had leftover quiche for breakfast, leftover carnitas with avocado mango salsa for lunch and I made last week's smash hit, MEATLOAF, for dinner again! (I did throw in about 3/4 of a bag of frozen chopped kale in addition to last week's recipe and it worked great to keep it moist!) I am starting to feel "normal" (the fatigue is leaving) and I think I might actually want to start incorporating some exercise. (GASP!) I am thinking ahead more often so I am prepared to make good food choices and I am streamlining cooking "Whole30 style" for a family of 6. All in all, things are good! I am having fun discovering spicy herbal teas. It is amazing how sweet they taste since I currently am not consuming any sugar. A quick recap of today's meals are as follows. Breakfast was leftover ham, onion, kale quiche with sweet potato crust and a pear.
Lunch was leftover carnitas with mango avocado salsa and guacamole. (Seriously, I could eat this meal every day...three times a day!)
Dinner was a meatloaf which consisted of 1 lb ground venison, 1 lb ground pork, 3/4 bag frozen/chopped kale, 3/4 c chopped onion, 3/4 shredded carrot and zucchini. I also used 3 eggs and 3t Italian Seasoning. I roasted some cauliflower in EVOO and chopped garlic and had a nice side salad as well. ~Jen
