Day #23...We Dug Out and Played in the Snow!

Another day with the kiddos at home...snow day! I made sure to have a good plan in place for our meals today and was able to release a touch of my need to bake for my family :) We had leftover no-crust veggie quiche for breakfast and I made an amazing Paleo banana bread! This bread was great and was 100% sweetened by the bananas! It is a "keeper" recipe and will be made again in the future. The best part about this experience is that there is still some left for tomorrow morning (and I only made a 9x9)! This may not seem like that big of a deal...but for us it is! Generally when I bake something we make sure to wax it off. Everyone had a square with their "protein" (eggs) and everyone was content. It is so gratifying to see everyone adapting their habits. We worked hard this morning to get chores done so we could go sledding! I knew that sledding was going to be a serious workout (30+ inches of snow is no joke)! So I pulled out some ground beef and planned to make burgers when we got home for lunch, as I know that everyone was going to be famished! Sledding was indeed a workout, but it was so much fun. It took a good 45+ minutes to get some tracks laid down. We hung out at Gowen Park for a little over 2 hours and when we got home everyone was starving! I whipped up some ground beef hamburger patties and we topped it with yesterday's venison chili and diced avocado. It was amazing!
Once everyone had eaten lunch we all just crashed for a bit. I was so thankful that I had put a roast, carrots and potatoes (following the 1 potato per person rule :)) in the crock-pot this morning. As I prepared for dinner I made myself a great side salad, steamed some broccoli for the rest of the family and whipped up some gravy from all the drippings (using arrowroot) and dinner was served...no-fuss! ~Jen
