Day #3...We Are Settling In...Everyone but Claire
So today was pretty uneventful. I am grateful that I did not have a repeat of yesterday morning. I am still not feeling great, but it is manageable. It is hard to describe how I am feeling. I am not hungry at all, which is weird to me (as this is not my first rodeo with a new "diet," and based on past experience, at this point in the journey I am generally hiding in my closet eating chocolate. If nobody sees me eating chocolate then it doesn't count, right!). I just feel like I am in a fog and I am pretty tired.
My school-aged children seem to be adjusting quite well. We are breezing through breakfast (they have requested something other than eggs, so we are making almond flour waffles tomorrow). I pack their lunches the night before, and those seem to be going well too! I thought there would be more Doritos withdrawal, but they have not even mentioned Doritos, it's a little weird...but I'll take it! Now Claire, she is a whole other story. I am pretty sure she asked, pleaded and begged to stop "Whole 30" at least 12 times today. She does not like eggs, so breakfast is a challenge right off the bat with her. She is eating a lot of fruit! Claire is definitely a "carb queen," so she is really missing her cereal and snack crackers, but she is a trooper! Tonight I saw a light at the end of the tunnel though. She could not get enough veggie meatloaf. I am not sure if she was just that hungry (because it was the end of her day), or if she is coming around and is ready to jump on board and try new things? (I am really rooting for the latter)
Here's to another day in the books and a quick recap of today's food.
I wasn't feeling great when I got up and going, so a handful of almonds, a few strips of bacon and some sliced strawberries and blueberries started my day.
Lunch was a quick salad of cucumbers, tomatoes and avocado with a drizzle of EVOO and a hunk of leftover pork roast (from last night).
Dinner was a new recipe. 1 lb ground pork, 1 lb ground venison, 2 eggs, 3 T dried onion, 3 t Italian seasoning, 1 yellow pepper (diced), 1 green pepper (diced), 2/3 c shredded zucchini & 2/3 c shredded carrot. It made a great meatloaf! We had a side of sautéed cabbage with crumbled bacon (it was really good!) and a side of spaghetti squash w/ homemade (no sugar) marinara sauce. ~Jen

Eventually they will get hungry enough and just eat what you make them :) It sounds kinda mean, but I try to really limit snacking for my kids because when they don't snack, they are actually hungry enough to eat their dinner! My kids are way less picky when I am not willing to make "kid friendly"/unhealthy food all the time, if I am willing to make it, it is all they want to eat. Good luck with Claire, I am sure she will come around :)
