Day #19...Don't Reinvent the Wheel all the Time

The snow was falling as we woke this morning, and a day full of basketball was filling our Saturday calender. Ethan was still pretty yucky this morning, so Wes was off to the gym alone to coach his Junior team. I had a piece of veggie & ham no-crust quiche for breakfast and jumped into brainstorming for lunch and dinner. Weekends are a little more tricky because I have to provide and extra meal a day for my entire family (lunch), as opposed to our weekday routine. It is easier to pack their cold lunches during the week then to have a complete lunch "spread" for the six of us on Saturdays and Sundays. So I got a pork roast going (for dinner) and decided on some turkey burgers for lunch. Since I got my mayo yesterday, I couldn't resist whipping up some chicken salad with chopped apple for me for lunch and it was awesome! By this point in the day we had found out that the girls game was cancelled, so I got a small grocery list together and braved the weather to pick up a few items for tomorrow. I made an Italian pork roast with green olives for dinner and it was good, but it was no "carnitas." I began to think about last night's so-so dinner and tonight's so-so pork and decided that I making things just a tad too complicated. I do not have to come up with fresh, new meals everyday. When I find something that we love, we can have it every week if we want! This "mental moment" is going to make my last 10 days a piece of cake! We had some mashed cauliflower and kale "chips" along with our pork roast for dinner! ~Jen
